Weekend project: Margarita popsicles

Have your drink and eat it to. That’s what I say, particularly during these hot summer days. If you’re looking for a fun project and are a margarita fan, give this popsicle recipe a spin. As with the cocktail, it’s fairly simple: combine fresh citrus juice with the tequila of your choice, add a little orange liqueur, sweetener and a splash of club soda and chill. Then voila! You’ve got your cocktail on a stick. The recipe makes a dozen or so popsicles, depending on size, so you’ll have plenty if you’re planning for guests (or a stash always at the ready whenever you want to indulge yourself).

MARGARITA POPSICLES

20 minutes, plus freezing times

Juice of 4 limes

Juice of 4 lemons

Juice of 2 oranges

3/4 cup sugar

4 ounces tequila, preferably reposado

1 ounce orange liqueur, preferably Grand Marnier

1 cup club soda

In a large, non-reactive saucepan, combine the lime, lemon and orange juices. You should have about 2 cups liquid. Add the sugar and gently warm the liquid over low heat, stirring frequently. As soon as the sugar is dissolved, remove from heat. Stir in the tequila, orange liqueur and club soda. Pour some of the mixture into each mold, leaving about a half-inch of space at the top. Place the lid on the molds and fit each with a wooden stick. Freeze until solid, 3 to 4 hours. Remove the popsicles, run the molds briefly under warm water to loosen, then pull the popsicles from the molds. Wrap the popsicles in plastic wrap and freeze if not serving immediately. The frozen popsicles will keep 1 to 2 weeks.
